Day five –

Helooo there,

Today was very busy, first day at a new job- seemed to go great!

Just before I started work I had 30 min to spare, so I popped to Marks and Spencer’s for some breakfast and lunch hunting.  I got some bits of cheese, some coconut chicken (pictured below) which was surprisingly low in carbs!

Naturally being M&S it came to an extortionate amount which made me annoyed I am so unorganised 😦 .

I also got a salad with orzo pasta, red pepper and feta cheese – which was also only 13g carbs, it was delicious and worth using up the carbs for!!

I didn’t really have breakfast so the lunch which wasn’t until around 2:30pm was well enjoyed! I actually never even started feeling hungry until around 2pm, odd!

For dinner I just had some chicken again which did put me a bit too high on protein, and not so much on fat – but the calories for today were under- mainly due to me skipping breakfast!

I drank a few litres of water throughout the day too, which is important!

I have a Greek yogurt and a salad and the coconut chicken again for tomorrow, and I’ll be sure to make a few coffees throughout the day as well!

That kinda counts as organised?!

Today’s Macros were

Calories 2148/2400

Carbs 40g

Fat 141g

Protein 178g

I still need to get the hang of these macros, I think the key will actually being organised!! Something which I’ve just failed to do so far, next time I have a few days off I will TRY to do some meal  planning and get more organised!!

I know I’m being shameful so far, ORGANISATION is my goal for next week.

For now, I shall bid you good night, I have to be up early to go vote before I go to work!! Our general election is tomorrow, so quite an important one.

Good night for now!

Jem ❤ xx

Day 4!

Helló! 👋

Today has been an extremely simple day as I felt sorry for myself with my painful shoulder and had to lay down to relieve the pain which meant I had rather a lot of sleep time!  Oops!

I had the most amazing lunch. Loads of chipolata sausages, creamed mushrooms and onions and I added some fried eggs for good measure :).

I never had breakfast so it was a big brunch. It came in at 1900 calories  (yikes). 20g of carbs. 145g of fat. 93g of protein.

I then had my extended nap for most of the rest of the day – so cloud bread will have to wait for now.

For dinner I’ve just roasted some onions and butternut squash, which admittedly isn’t the most low carb food. I also added a few fried eggs again as I don’t have any meat left! Oh and lots of mayo of course.
This came in at around 420 calories. 30g of carb, 8g fat.  27g of protein.

All in all I’m about on track for the days macros. Except I’m possibly a bit close on the upper carb limit. Buy I was quite low carb yesterday so I’m hoping it’ll be oka!

Total for the day

Calories 2300 ish /2400 goal

Carbs 55 ish oops!/30 ish goal

Fat 153g/187 goal

Protein 120/150ish goal

I have slipped up a little with my ratios there, but a new day and a new challenge!

Tomorrow I start my new job! 9 til 5. I was a bit unprepared today and so I will have to wing it a bit on my lunch. I’m hoping to get the chance to nip to Tesco on my break in order to grab something.

In future I’m going to plan my lunches and make sure they’re awesome!

But for now, good night!

Day 3 roundup!!

I felt full of energy most of today, I had the house to myself (share in a student house at the moment- not for much longer, thank f@#k) so i experimented some!

I did the unusual drink that I mentioned earlier and I also made some biscuits, not the UK kind… but american biscuits which are kinda similar to our scones I guess.

RECIPE FOR Biscuits here!

I’m going to steal their picture, as mine were not so pretty this time around

Low Carb Biscuits Recipe (Keto Friendly)

Now, I never had any baking powder, so they didn’t rise like the ones on their photographs, but they turned out mega delicious! I halved the recipe and made 4 of them,  2 to have with my supper and I’ll have 2 tomorrow for breakfast!

My macros for the day were on track! I started using a new app called MyFitnessPal, which a lot of fellow Keto people will be familiar with.  They have a huge database of ingredients already stored, so it makes it much easier to find things! I’m still playing around with the ratio of fat to carb to protein, but the calories are still around 2300/2400.

Now as you may notice I had some hydro tablets, which are basically to help make sure I have enough electrolytes, as there seems to be warnings everywhere I look that while doing Keto you need to take extra to make up for a likely deficiency! I had some of these tablets already in the cupboard from one of those irresistible offers online, which have conveniently become of use for once!

Oh and for some reason I have a killer pain in my shoulder that I took the paracetamol for, I feel like somebody is standing stabbing my shoulder with their finger. I suspect it may be because I’m moved from always having a backpack to having a handbag that I wear on my shoulder… who knew trying to look less studenty and more professional was going to cause such pain!!

TV show

While trying to distract myself from the pain in my shoulder, I’ve been watching a new TV show called cardinal, I’m only about to start the 4th episode but it’s very mysterious and interesting for sure.  I bloody love me a good series to watch, and much prefer to chill out and watch TV than be social – usually.

Some favourites include, Grey’s anatomy, Scandal, The handmaid’s tale, House of Cards, Orphan Black and many many others.

Oh well, tomorrow I shall try the recipe I got the cream of Tatar stuff for. Cloud bread, awful or amazing? We shall see!

I am gonna go make that late dinner of kippers with broccoli and the biscuits, but I’ll post a picture soooon as I have done 🙂

Love Jem

xx ❤

P.s Okay this was my dinner( before I put it in, obv)…. Safe to say, I’m NEVER buying kippers again, bloody disgusting, far too many bones.  I ended up leaving half of the veg as it ended up covered in bloody bones too 😦

Oh well, I’m still pretty full and lesson learned!!!20170605_231118.jpg

Odd drinks-welcome to day 3!

Good morn… I mean good afternoon! Just wanted to share an odd drink I just tried.

  1. 1 egg
  2. 1 teaspoon of cocoa
  3. 1 teaspoon of matcha green tea
  4. 120 ml of boiling water
  5. 8 Mil of mct oil (still getting used to it) small quantity at first saves niagra falls coming out your butt.

Then I blended it and added a teaspoon if sweetner.

I’m surprised at the consistency, it’s very thick and yummy! Perhaps next time I’ll add some cream as well!

Macros for it were quite low too 🙂

What do you think??? Its quite filling for only a small amount of macros!  (Totally having that leftover burgers soon still tho)

Day 2- Burger and salad! And naps <3

I’d like to introduce you to something amazing.

I’m just going to leave it here for a moment.

Dark green salad, home-made burgers, Double Gloucester cheese, bacon and mayo.

Sorry, here is another one, just in case you missed the first one.

Okayyyyy, so……… BEST MEAL EVER.  We shall talk about it in a bit.

For breakfast I had a little bit of leftover pork belly and mushrooms from last nights dinner and I mixed it with eggs and microwaved it into an omelette concoction at work. It kept me full until around 11 or so, but I didn’t want to have anything heavy, as I knew I wanted a huge dinner, so I wanted a bulletproof coffee…….

Bulletproof coffee is described in several ways on different sites, I understand it to be a coffee mixed with grass fed butter and oil.  Preferably blended into a nice frothy consistency.

The oil can be coconut oil or an oil which contains a higher (C8) Caprylic acid per Tablespoon than Coconut oil.  Such as THIS one here on Amazon, it’s not cheap- but the claims it makes in regards to several factors, be it mental performance, weight loss etc are worth a read up on.

One of many pages that discuss MCT oil.

However, I couldn’t find any coffee in the staff room so I had a tea with butter instead.It was a bit of a ninja move casually dropping a portion of butter into a cup of tea, I didn’t want to draw attention to it and have my nurse colleagues think I’m more crazy than they probably already do! But I managed and it was very nice!! I also had a tiny bit of cheese!

That kept me full for the afternoon.

My boyfriend had been for a lovely burger yesterday and haven tried said burger store before, I knew how amazing they are- my jealousy made me crave a good burger. So I decided that for tea I would make some of my own!

I went to Marks and Spencer after work with the intention of getting cream of tatar for a low carb bread recipe (I’ll share it when I get around to it) and well, as usual, I got a bit carried away.

There was some nice prepared salads reduced so I grabbed some, and some cheese!

After the mistakes of yesterdays carb overload on the coconut milk I tried to avoid today.

I got home and had a 2 hour nap, then got up and decided it should be a 4 hour nap instead…. nothing new there, I ❤ naps.

Now, this supper was delish! I added some seasoning to some 23% fat beef mince and moulded it into some burgers, I put a little block of cheese inside them for good measure too.

I had 2 of the burgers (leaving 2 for lunch or dinner tomorrow), with salad, cheese, bacon, and mayonnaise.

Bloody delicious, and i’m full now!

Fat = 46.9

Calories= 2735

Now, I was prob about 400 calories over my target for the day, but I had walked over 10,000 steps – some of which was up a big ass hill, so I’m gonna allow myself to say that’s okay for today.  The carbs were WELL below target so it wont stop me being in ketosis (as far as i’m aware).

I’ll try and keep the calorie count better tomorrow! Getting there!!

❤ Love Jem

End of Day one

I Survived!!, I managed to stay under the carb limit (ish), but it’s the first day so i’ll learn and improve as I go.

3 x Babybells

1 x pot of spinach and 2 eggs

Fat = 19.5g

Protein = 15g

Carbs = 2.7g

6 slices of German salami

3 x babybells

Fat = 30g

Protein = 25.9g

Carbs = 0.6g

An iced coffee with some double cream in it

half carton of coconut alpro drink

Fat =35g

Protein =2g

Carbs =24g

Mushrooms, onions and pork belly!

Carbs= 8g

Fat = 189.5g

Protein= 120g

Carbs= 36g

Calories= 2336, which is right on target, calorie wise – even though the protein is higher and the fat lower… the calories balance out which hopefully will be okay!

Now a lot of these are rough estimates as I need to work out the nutritional value of some of the veg.  But HOPEFULLY it’s been a good day!  I’ll test my ketones tomorrow to see if I’ve managed to enter ketosis (test is just to pee on a stick and see what the colour comes up as and compare it to the pack).

Now, my first regret today is that coconut milk drink, as nice as it was – I soon realised that the carb content was quite horrific and used half my daily goal! Oops!

Now, I love meat, love love love love love!! But, I found that I used a lot of protein between breakfast and lunch – so I think I’ll aim to have less in earlier parts of the day and keep for for a nice meaty dish later on (Or to make sure I at least have a nice tasty meaty lunch!)

I also got a bit carried away with my iced coffee and poured far too much cream into it, in future i’ll make sure to just put a tiny bit in- so I can enjoy the nice ice coldness without feeling guilty about the fat content!

All in all, I feel pleased to have completed day one under 40g of carbs, I feel the same as ever- I’m hoping to feel more energetic once I really get going. We shall see!

I also went shopping in Aldi after work, I found it absolutely crazy how many carbs are in almost EVERYTHING!!! It’s really hard to find carb free food – even most veg is quite carby, I’ll have to get used to eating more dark green veg I think, things like broccoli, kale, spinach etc.

I bought some random meat products and creams and butter etc. We shall see how I used them over the coming days :).

I will update again tomorrow.

ciao for now! ❤

Day 1- Weekend is here

It’s currently half 6 in the morning. Why I am up at this ungodly hour?  Well work of course, I currently work weekends 7 till 2. Soon to change but I’ll discuss that whén the time comes!

I’ve decided today is THE day. I haven’t had the chance (or couldn’t yet be arsed) to go get a proper shop yet. But I have however nipped to Tesco express on my way to work. It’s amazing how many things have so many carbs in them why you look at all the labels.

I never thought I’d be one of those annoying people studying every label, but alas- here I am after 10 min browsing around Tesco for some food suitable for a keto breakfast and lunch.

I was hoping for strawberries seeing as it’s the season for them to be at their best. I love strawberries, my grandparents had a huge garden full of different fruit and veg and they had an abundance of strawberries that I’ve never quite been able to match the deliciousness of since.  Sadly, Tesco were out of them and I had to settle for a pot of spinach and eggs. I also got a pack of salami, some babybels and a litre of coconut milk.

I’m not quite sure how I envisioned meals out of this, I guess I’ll have the spinach, egg and few babybells for breakfast and then the salami and few babybells for lunch. It’s all keto ish and I’ll make a table when I get home (and most likely after a nap-shitty nights 😴 ) to summarise what I’ve eaten. N see how much macros I have left for dinner!

I realised that I can have one of my most favourite things on this keto diet…. iced Coffee.  Not just any iced coffee but with double cream or even coconut cream!! GET ME A BLENDER.

This alone has given me the will to go shopping after work and get some coconut cream and double cream along with some ice cubes. Then I can blend away and make the most delicious iced coffee. I’ll be sure to record how I do it later.

Anyways. I’d better crack on and eat this breakfast eh?

Bye for now!

❤ Jemma
